For nearly four decades, family-owned Mama’s Fish House in Pāʻia has been a destination restaurant for special occasions, thanks, in large part, to its fresh seafood offerings. (The gorgeous location perched on the island’s North Shore helps, too.) It was one of the first restaurants in Hawaiʻi that lists the name of the fisherman who caught what’s on the menu. Talk about fresh! The restaurant’s menu is full of dishes that use local ingredients: Molokaʻi venison, Hawaiʻi Island kampachi, Kauaʻi shrimp and a bounty of Maui-grown fruits and vegetables. Don’t miss the Tahitian ʻahi appetizer with fresh coconut and lime.

Hāli‘imalie General Store

First opened in 1988 but noted chef Bev Gannon—one of the founders of the Hawaiʻi Regional Cuisine movement—this quaint restaurant near the paniolo town of Makawao has always emphasized Hawaiʻi-grown ingredients. That holds true even now, two years after Wyoming-based Gather Restaurant Group bought the beloved restaurant. Much of the seafood is locally caught, and the restaurant sources its veggies and fruits—sweet potatoes, mangoes, lilikoʻi, mushrooms, onions—from Hawaiʻi farms. A must-try is the Haliʻimaile pineapple upside-down cake, made with caramelized Maui Gold pineapples.

Merriman’s Maui

No stranger to the farm-to-table, chef-owner Peter Merriman (another Hawaiʻi Regional Cuisine founder) has built his reputation on supporting Hawaiʻi’s farmers, ranchers and fishermen. That’s part of the appeal of his Kapalua restaurant, which offers panoramic ocean views from its outdoor seating area. (Sunsets are amazing, just FYI.) At least 90% of the ingredients used are locally grown or caught. Try dishes like popular Hawaiian ʻahi poke, which is made with locally caught fish and Maui onions;  the house-made cavatelli pasta with Hāmākua aliʻi mushroom and locally grown asparagus; and the  Waialua Chocolate Purse, using Oʻahu-grown cacao and vanilla.

The Banyan Tree at The Ritz-Carlton

Indulge in upscale, farm-to-table dishes in this gorgeous open-air restaurant—complete with views of Honokahua Bay—at the Ritz-Carlton Maui Kapalua resort. Its latest menu is rooted in coastal cuisine—and it’s brimming with local ingredients, including Kauaʻi shrimp in a garlic-brown-butter sauce, chimichurri made with Kula greens, and a banana cream pie flush with local apple bananas.

Originally started by “Top Chef” and James Beard nominee Sheldon Simeon, Lineage has kept its family-meal vibe using locally grown ingredients. Today, chef Emmanuel Eng showcases Hawaiʻi’s bounty in innovative Asian-inspired dishes like crispy local cauliflower with spinach and a curried satay sauce; a mushroom liangban (spicy cold tofu) sald with local lettuce, radishes and cucumbers; and the popular pandan bread pudding using fresh local fruit. Even the cocktails boast local ingredients.
