Dishes You Love from The Kahala Hotel & Resort
From the popular ʻahi poke musubi to the new Millennium Star martini, the luxe hotel celebrates 60 years of culinary creations.

Thousands of guests have dined at The Kahala Hotel & Resort over the past six decades, and many have fond memories of more than just the ocean views.
The legendary hotel has long emphasized its culinary program, which continues to highlight fresh and local ingredients.
To celebrate its 60th anniversary, it’s bringing back some of the hotel’s classics, including the curry chicken salad in a payaya half at the Plumeria Beach House and the Duke Waiʻalae at Hōkū’s. Other returning dishes are the Kāhala house salad with celery seed dressing, sautéed Kauaʻi shrimp and Hōkū’s warm chocolate coulant.
Some of the hotel’s signature dishes are still on the menu, after all these years. Those include the fried ʻahi poke musubi, Kāhala signature bento, wok-fried whole fish, chef’s onion soup, Maui Nui venison burger and its signature thin pancakes and decadent bread pudding.
New to the drink menu this year is a lineup of creative anniversary cocktails inspired by famous diamonds. (It’s the hotel’s Diamond Anniversary, after all!) The Pink Sunrise is a gimlet inspired by the intense pink-colored, 29.78-carat, heart-shaped diamond of the same name. The Ocean Dream is a modern twist on the classic Grasshopper, named after the 5.51-carat Ocean Dream diamond, the first and only natural diamond known to possess a blue-green hue; it’s considered one of the rarest diamonds in the world.
The most over-the-top cocktail, though, is the Millennium Star, an exclusive diamond martini named after the only diamond in the world that’s rated both internally and externally flawless. It includes a caviar-stuffed olive, cocktail onion and Champagne gelée, and the cocktail is enhanced with diamond shimmer.
